Long grain rice/ Basmati rice 1 cup
Green lentils (picture below) 1 cup
Onion 1 big, chopped
Onion 1 big, thinly sliced
Water 2-2 ½ cups
Olive oil 2 tsp + 2 tsp
Cumin powder 1 tsp
Salt and pepper as needed
Preparation
In a deep pan, add 2 tsp olive oil and sauté the chopped onions until golden brown. Now add the washed lentils along with cumin powder. Saute for a few more minutes (2 minutes) and add 1 cup water and bring to a boil. Now cover the pan and simmer for 10 minutes. Open lid and mix well. Now add rice, salt, pepper and remaining water. Bring to a boil and simmer for 10-15 minutes or until 90% of water is evaporated. Switch off flame and keep covered for another 10 minutes before serving.
In another pan add the rest 2 tsp olive oil and sauté the sliced onions until golden brown. Serve the Mujadarah topped with caramelized onions…
Notes: Add water little at a time if you think the rice or lentils need to cooked more.
