Butter ½ cup, softened
Sugar 1 cup, can be reduced to half depending on your sugar preference
Vanilla extract 1 tsp
Eggs 2 nos
Over ripe bananas 1 cup (around 2) mashed
Salt ½ tsp
Bread flour or all purpose flour 1 ¾ cups
Baking soda 1 tsp
Baking powder 1 tsp
Sour cream ½ cup
Dates ½ cup, chopped
Preparation
Sift all the dry ingredients (flour, baking soda, baking powder and salt) into a bowl and set aside.
In a mixing bowl, cream butter and sugar until smooth. Add the vanilla extract, mix well and add eggs one by one and mix in a medium speed using an egg beater. Next add the mashed bananas and incorporate well. Now add the sifted dry ingredients to this and mix using a wooden spoon. Add the sour cream and dates, incorporate well. Pour the bread batter to a greased loaf pan and bake at 350 F for about 50-55 minutes.
