Its sizzling summer time in the Cajun country. Its also time for the strawberry picking festivals across the parishes. What more to combat the humid, wet summer in these wet lands with its own freshly picked strawberries and the good old sunscreen for the stomach, yogurt. This recipe combines strawberry, strawberry flavored yogurt and Jell O in a unique proportion to make a mouthwatering, colorful and simple dessert. So get into your Hawaiian attire, put on your glasses and stretch on your poolside lazy chair underneath that big old Umbrella with this delicious and healthy dessert in your hand…
Yoplait 99% fat free creamy yogurt (strawberry) 3 (6 oz container) or 2/3 cups from a 2 lb tub
Wild strawberry flavored Jell-O 1 box
Boiling water 1 cup
Graham cracker mini pie shells 10 nos
Fresh strawberries a few
Preparation
In a bowl, add the entire packet Jell-O and pour the boiling water to it. Mix well to dissolve the Jell-O. Next stir in the yogurt and mix everything to combine. Cover and refrigerate for 1 ½ hours to thicken and not set.
Meanwhile bake the mini pie shells at 350 F for 5 minutes. Cool and set aside.
After 1 ½ hours, beat the thickened Jell-O-yogurt mixture at high speed for 10 minutes or until a creamy consistency is attained. Fold in the chopped strawberries and pour into pie shells and allow to set in the refrigerator for at least 2-3 hours. Garnish with fresh strawberries..

Wow superb dear..I am also a strawberry fan and we r planning to go to a veg farm for my little one this weekend to pick strawberries etc etc ..little one nu enthariyam...he is only 20 mnths..to be honest I planned it for me :)Dont tell my hubyy..shhhhhhhhh...:)
