Who don't love vendakka/okras, almost everyone does, isnt it. So here we are today, with an easy side dish that pairs so well with rice, for those days you are in no mood for those elaborate cooking!!!
Vendakka/Okra 2 cups, cut lengthwise
Shallots 2-3 nos, thinly sliced
Red chilly powder 1-2 tsp, as per one’s spice level
Mustard seeds ½ tsp
Salt as needed
Curry leaves 1 sprig
Oil 1 tsp
Preparation
Heat oil in a non stick pan and splutter mustard seeds. Add the cut Vendakka/Okra and shallots and cook in a med flame for 3-4 minutes covered. Add salt and cook for another couple more minutes covered. Next add the red chilly powder, curry leaves and stir fry uncovered until it fetches a dark brown color. Serve hot with rice.

Okra fry looks delicious...my favorite,beautiful and tempting clicks dear.
ReplyDeleteLooks yummy.. am not a great fan as they are slippery.. But love them when they are cooked up to slight crispiness as this.. Everytime I cut it in circles and they dont tend to be crispy but gets burnt out.. Shall definitely try this recipe cutting okra lengthwise... BTW wonderful pics as always...

just 1 tsp oil..and the vendakka looks perfectly crisp!
ReplyDelete@ Mallugirl..Yes just 1 tsp oil is more than enough to get the above crispiness and that is why we suggest to do it in non stick vessel :-)

ReplyDeleteSo I attempted to make an okra dish and failed miserably!! Mainly because it was my first time cooking with it - I guess I just did not know how to cook it yummy. If only I would have seen this recipe one day earlier... :)
