We came across this emerald rice, recently in a cookery show and was wanting to try it for ourselves. We must say, its very easy to prepare and goes so well with any kind of dry preparations like ginger chicken, chilly fish, pepper chicken, gobi manchurian to name a few. It is a very flavorful and delicious preparation with all the goodness from the green vegetables used. As its name suggest, its green in color and Shyja chechi had named it absolutely PERFECT!!
Basmati rice 2 cups
Celery, green onions, green bell pepper ½ cup each, finely chopped
Spinach 1 cup, packed
Soy sauce 1 TBSP
Green chilly sauce ½ tsp
Black pepper powder 1 tsp
Salt as needed
Water to cook rice
Butter 1 TBSP
Oil 2 tsp
Preparation
Wash and soak the rice for at least 30 minutes. Drain and set aside.
Heat butter in a pan and add the drained rice and fry for 3-4 minutes or until the grains are separated. Now add enough water, for 2 cups rice 4 cups water or a little less should be enough. Once the rice is 90% cooked switch off the flame and keep covered until ready to use. Set this aside.
Boil 1 cup water and add the spinach, switch off flame and let it sit for 10 minutes. Drain the leaves and grind this to a smooth paste. Set aside.
Heat oil in another pan and add the entire vegetables one by one and sauté for 4-5 minutes at a medium flame. Next add salt and black pepper powder, mix well. Now add the soy sauce and green chilly sauce and allow to come to a boil. Reduce flame to low-med and add rice and mix all to combine. Now add the spinach paste and mix well. Cook covered for a couple more minutes and remove from flame. Emerald rice is ready and this pairs very well with any kind of dry preparations..
Tips
You can substitute basmati rice with any kind of rice that you routinely use. Along with the above said vegetables one can add green beans and green peas too
Non Vegetarians can add eggs and shrimp or chicken for an added flavor and taste
