Beans tortilla rolls (Makes~24)

Beans tortilla rolls

Ingredients

1. Fat-free (vegetarian) refried beans 16 oz can
2. Cream cheese 4 oz
3. Salsa (storebought) ¼ cup
4. Kashmiri chilly powder ½ tsp
5. Cumin powder ¼ tsp
6. Green onions 2 stalks, chopped finely
7. Mexican cheese blend ½ cup, shredded
8. 6-inch flour tortillas 12 nos

Directions

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine refried beans, cream cheese, salsa, chilly powder, cumin, green onions and 1/2 cup shredded cheese. Mix thoroughly to combine.
  • Lay a tortilla on a work surface. Spoon about 2 tablespoons of the mixture in a thin line from the bottom of the tortilla towards the middle.. Be careful not to use too much!  Tightly roll the tortilla from the bottom (the filling will spread out and will hold the tortilla together). Place the rolls seam-side down on the baking sheet. Repeat for the remaining tortillas.
  • When the rolls are assembled, brush the tops lightly with oil and sprinkle them with a bit of salt. Bake for 15 to 20 minutes, until crisp and browned. Serve warm with salsa..

Finished chicken masala

Now add the marinated chicken, mix everything well and cover it with a lid. Do not add any water as water will ooze out from the chicken. Cook for about 10 minutes at medium flame. Bring down the flame to medium-low and cook covered until the chicken is done, stirring occasionally. It will take at least 30-45 mts for the chicken to be properly cooked. When the chicken is done, check for salt and masala. Switch off the flame.

Final Layering and garnish

Fried onions, Fried cashew nuts and raisins

You will need a cookware which can be put on stove or which is oven-safe for layering.

Smear the base of the cookware with ghee. Add a layer of rice and top it with the prepared chicken masala. Pour the gravy over the chicken pieces. Add the fried onions, cashew nuts and raisins. Now add another even layer of rice above this and top again with the chicken masala and the fried onions, nuts and raisins. Repeat the process keeping in mind that the top layer should be of rice garnished with onions, nuts and raisins. Now seal the cookware with an aluminum foil and them cover with the lid. Bake it at 350 F for around 15-20 mts or on stove top at simmer heat for the same time.

Kozhukatta/ Steamed sweet dumpling(Serves 5)

VINAYAKA CHATHURTHI SPECIAL

Happy Vinayaka chathurthi

Happy Vinayaka Chaturthi to all our dear readers..This year’s Vinayaka Chathurthi falls on Saturday September 11 th. May Lord Ganesha bring  peace of mind and joy into our abodes and minds.  This post  is a humble tribute to Vinayaka and details the recipe of  Kozukatta, which in is almost synonymous with ‘Modaka”, Lord Ganesha’s favorite offering. Esoterically it symbolizes ‘siddi’ (fulfillment) and absolute joy. Hope you enjoy both as you try this offering.

Kozukatta is also a very healthy , steamed, delicacy which was, until recently, a favorite snack of Malayalees. The onslaught of fast food and packed “Bakery” items has almost relegated this snack to some thing that can be seen only on special religious occasions.  The nostalgic memories of my school days are embellished with vague screams of “ I am hungry” as I run home from the school bus to find this warm, steaming snack and  tea waiting for me, their taste heightened with amma’s smile…..

The recipe courtesy goes to Maya and Lakshmi, the brain and beauties behind one of our favorite blogs Yummy O Yummy.

Rice flour 1 cup (used puttu podi)
Grated coconut ¾ cup
Jaggery ¼ cup, melted
Cumin seeds ¼ tsp
Salt as needed
Boiling Water as required

Kozhukatta/Steamed sweet dumpling

Preparation

Melt the jaggery at medium heat with little water and once it forms a thick syrup, mix the coconut with it. Stir well and when the mixture becomes dry, switch off the flame. Set aside.

Mix cumin seeds with rice flour. Bring water to rolling boil, add salt. Now add water little by little to the rice flour until it forms to a dough, stirring continuously using a wooden spatula. Allow this to cool for some time and knead well with your hands. Make medium to large sized balls with the dough. Flatten each of them with your palm and fill with a tablespoon or two of the coconut jaggery mixture. Work from all sides and seal to make a ball. Repeat the same with the rest of the dough. Steam cook for 20-30 minutes in an idli cooker or steamer. Serve warm…
