Bhatura (Serves 5)

When the Adukalavishesham duo, (Suchitra and Vineetha) posted this bhatura recipe, I couldn’t resist my cravings and immediately set out to make this wonderful desi delight. Needless to say we were delighted with our decision as the bhaturas turned out to be wonderful, soft and fluffy.Thanks to you girls for such a nice recipe and for my dear friends, please find their recipe here. Bhatura
All-purpose flour or Maida 2 cups
Eggs 2 nos, medium
Oil 3 TBSP + more for frying
Dry yeast 1 1/2 tsp
Sugar ½ tsp
Yogurt 3 TBSP, heaped
Warm water around 3-4 TBSP
Salt as needed
Preparation
Add the sugar and yeast to warm water and set aside. In a large mixing bowl, mix together, flour and salt. Lightly beat the eggs. Now make a center in the flour mixture, add yogurt, beaten eggs, water with yeast and oil. Knead it to smooth, soft dough. Cover the dough with a dampen cloth and leave aside to ferment for at least 2-3 hours. The dough will rise almost into double the size.
Heat oil for frying in a pan. Knead the dough for a few minutes and divide into equal sized balls. Flatten the dough balls and roll out into medium thickness. Drop the rolled out dough to oil. When it fluff up, turn to other side and wait for it to brown a little bit. Drain the excess oil onto paper towel..
