A spiced up make over to the regular sweet kozhukttas…
Rice flour 1 cup (used puttu podi)
Grated coconut ¾ cup
Cumin seeds ¼ tsp
Ginger 1 tsp, finely chopped
Green chilly 2 nos, finely chopped
Shallots 10 nos, thinly sliced
Curry leaves a handful
Dry red chilly 2-3 nos
Mustard seeds ½ tsp
Coconut oil 1 tsp
Salt as needed
Boiling Water as required
Preparation
Mix cumin seeds and coconut with rice flour. Bring water to rolling boil, add salt. Now add water little by little to the rice flour until it forms to a dough,stirring continuously using a wooden spatula. Allow this to cool for some time and knead well with your hands. Make medium to large sized balls with the dough. Steam cook for 20-30 minutes in an idli cooker or steamer. Allow to cool.
Now, cut each kozhukattas into quarters. Heat coconut oil in a kadai. Splutter mustard seeds followed by dry red chilly and curry leaves. Now add ginger, green chilly and shallots, sauté until brown in color. Next throw in the quartered kozhukattas and mix well. Switch off flame and serve as a tea time snack or a breakfast…
