Cauliflower crust veggie pizza (Makes 2 medium size)

Cauliflower crusted veggie pizza

Pizza is synonymous with unhealthy food, but also with something that the kids would unconditionally love to munch on..Why aren’t we surprised, right? Well , this entry is the outcome of an effort to combine the luring aura of pizza with healthy ingredients that are good for all of us. The base of this pizza is made of cauliflower (serving of veggies! yaa ..hoo) with minimal use of cheese and other not-so-desirable ingredients!

Riced*, cooked cauliflower 1 cup
Egg 1 no
Mozzarella cheese 1 cup, shredded + more for topping
Italian herb mix 1 tsp
Pizza sauce (any brand you prefer) ½ - ¾ cup
Toppings I used diced red onions, green peppers and mushroom
You can add any cooked meat of your choice too.

Preparation

Preheat oven to 450 F.

*Clean and cut the cauliflower florets into small pieces and rice them using a vegetable chopper (as shown in the picture).

Cook this covered in a pan for about 12-15 minutes at medium heat.

Line a cookie sheet with Aluminum foil and spray with non-stick spray.

Cut the cauliflower into florets

Run through a food chopper to rice the florets

Riced cauliflower

Cook riced cauliflower covered for 12-15 minutes

 

 

 

 

Add egg, cheese, herbs to the cooked, riced cauliflower

Press evenly onto sprayed cookie sheet

Bake at 450 F for 15-20 minutes (the crust after baking)

Add the pizza sauce

 

 

 

 

Add the toppings

Add the cheese

 

 

 

 

 

 

 

 

 

 

 

Broil under high heat until cheese melted and toppings are cooked through

In a medium bowl, combine riced, cooked cauliflower, egg and mozzarella cheese. Combine well and add salt and Italian herb mix. (You can add any dried herbs of your choice). Now depending on the size of the pizza you want, press the mixture evenly onto the prepared cookie sheet. The thickness of the crust purely depends on how you like make it thin or medium thick or thick as per you wish.

Bake at 450 degrees for 12-15 minutes and keep in mind that if your choice is thin crust, make sure to check a little earlier or else the edges may start to burn. Remove the pan from the oven. To the crust, add sauce, toppings and cheese.
Place under a broiler at high heat just until cheese is melted and topping are cooked through.

Notes: Double the baking time for making crust if you double the recipe.
