Easy chicken curry

This is a very simple easy to make chicken curry and  goes well with any kind of rice, roti or bread.This is one curry that I have made the most number of times in my kitchen.I could always make my family and guests stay happy with this wonderful chicken dish.This can be made from the simple ingredients which you will always have in your kitchen pantry. So why do you want to wait friends do give it a try. You are going to love this rich flavorful curry and TRUST me folks you will never go wrong with this recipe Open-mouthed smile

Chicken (boned)  1 lb, cut to medium pieces
Onion  2 nos medium, thinly sliced
Tomato 1 large, chopped
Green chilly 2 nos, slit
Ginger 1 TBSP, chopped
Garlic 1 TBSP, chopped
Chicken masala 2-3 TBSP(I use eastern brand) use according to your spice level
Curry leaves 1 sprig
Whole garam masala- 2 clove/2 cardamom/ 1' cinnamon
Coconut milk ¼ cup
Salt as needed
Oil 2TBSP

Easy chicken curry

Preparation

Wash and cut the chicken to medium pieces.

Heat 2 TBSP oil in a medium pan. Add the whole spices followed by green chillies, curry leaves and onion.When the onions turn translucent add ginger and garlic, stir for another 2 minutes. Add the chopped tomatoes and cook until it's almost mashed. Add the chicken masala. Sauté until the raw smell goes off. Now remove quarter of the masala and set aside. Add chicken pieces to the rest of the onions. Mix well to combine and cook for 5-8 minutes. Allow the chicken to ozze out water. Next add 1/2 cup water and salt, cook covered until chicken is 80% done. Meanwhile grind the 1/4th part of the masala to a smooth paste using a blender and add to the curry. Mix well. Add ¼ cup of coconut milk and when it starts to boil take off from the stove.
