Thoran is an inevitable part of Kerala's regular meal. As I have said earlier, we love to test different combination of veggies in thorans and this recipe is the out come of another one of our successful experiments. Here we tested a combination of celery and carrots. This recipe came out with flying colors both at the taste and ease front. The gingery taste of celery combined with a slight sweetness from carrots just makes the perfect balance in this thoran..Enjoy!!!
Celery 3 cups, chopped
Carrots 3 cups, chopped
Shallots ½ cup, finely chopped
Green chillies 3 nos, slit
Grated coconut ½ cup
Mustard seeds 1 tsp
Cumin seeds ¼ tsp
Turmeric powder ¼ tsp
Oil 1 tsp
Salt as needed
Curry leaves a few
Preparation
Using a blender, crush together coconut and cumin seeds. Set aside.
Heat oil in deep bottomed pan. Splutter mustard seeds followed by curry leaves. Add the shallots and green chilly and sauté for 2 minutes. Add the chopped celery and carrots. Mix well and add salt. Cook covered until celery and carrots are soft. Open lid and add turmeric powder. Next add crushed coconut- cumin mixture. Mix well to combine. Adjust salt and take off from stove.
