A simple and yummy roast with soya chunks. We assure you friends, nobody will ever believe this is a vegetarian dish. Each and every bite into this soya roast, will make you crave for more. We are sure you will have at least a little more than your routine serving , if this is one of the side dishes. Enjoy!!!
Soya chunks 1 packet, we used nutrela (200 g)
Red onions 2 big, thinly sliced
Green chilly 3 nos, slit
Garlic 2 tsp, finely chopped
Ginger 2 tsp, finely chopped
Tomato 2 medium, chopped
Chicken masala 3 TBSP, I used eastern brand
Whole garam masala 1’ cinnamon stick, 2 cloves, 2 cardamoms, 1 star anise
Curry leaves a few
Salt as needed
Oil 2 TBSP
Water
Preparation
Wash the soya chunks 3 times under running water. Soak them in water for 20 minutes. Drain the water and then boil the soya chunks for 10 minutes on stove top. Drain the water again and allow to cool down. Squeeze out extra water, if any. Set aside.
Heat 2 TBSP oil in a wide mouth, heavy bottomed pan at medium high heat. Add the whole garam masala and sauté for a minute. Next add the thinly sliced onions followed by curry leaves and green chillies. When the onions turns translucent, add the ginger and garlic. Sauté for 3-4 minutes and add the soya chunks. Mix well, add salt and cook for another 5 minutes. Now add the chicken masala and combine well to mix. Add tomatoes and cook at medium heat until the tomatoes are soft. Now reduce the heat to low medium and continue cooking until the soya chunks get a dark brown color, stirring occasionally. This will take around 1 hour or more. Once they attain the color, switch off and keep covered until served..

Chicken masala,is 100% vegetarian and if you dont have it , you can add a blend of chilly powder, coriander powder, turmeric powder, garam masala,black pepper, salt, curry leaf, fenugreek, dry ginger, garlic, cumin seed, cloves, cardamom, cinnamon, nutmeg according to your spice level...Hope this helps..
