Naankattas

Naankhattas

Naankatta/Nankattai is a very popular Indian cookie, which is flaky in texture and sweet in taste. This recipe is very simple, and can be put together with everyday ingredients. The cookie can be enjoyed as a crispy light tea time snack and goes perfectly well with any mood or occasion.

All-purpose flour/Maida 2 cups
Semolina/Rava 2 tsp
Unsalted butter (Room temp)  3/4 cup
Sugar 1 cup
Cardamom powder ¼ tsp

Naankattais

Preparation

Preheat the oven to 375 F.

In a bowl, mix together all-purpose flour and semolina. In another bowl, cream the butter and sugar well, add the flour mixture in batches and make a smooth dough, mixing with a spatula or knead using hands. Add the cardamom powder and incorporate well into the dough. Make equal size balls out of the dough and flatten them between your palms. Lay them onto a buttered cookie sheet/baking tray. If you prefer, using a sharp knife, make depressions on the dough to place almonds, pistachios/cherries. Bake at 375 F for 13-15 minutes or until the cookies are firm and slightly golden in color. Remove the cookies from the oven and allow to cool for 5 minutes and store them in air tight container. Serve as a tea time snack or munch on to them watching a movie or your favorite TV show…

They are baked to perfection,and Love the peacock feathers in the picture, it brought back memories from school days when as kids we used to exchange feathers for our feather collection and I remember I had to part with 5 feathers to get one peacock feather from one of my friends:)Enjoy your day with the lovely baked nankatai:)!!!
