Prawn fry (Serves 4)

Chemmen fry

This firey prawn fry is a must try for all the seafood lovers out there. This can be made with the simple everyday ingredients and will be ready within no time. Addition of fennel seed powder is the secret and key ingredient in this roast and I am positive that nobody can go wrong with this recipe for sure. Enjoy!!!

Jumbo prawns 1 lb
Red chilly powder 3 tsp
Turmeric powder ½ tsp
Fennel seed powder 1 heaping tsp
Garam masala ½ tsp
Ginger 1 tsp, julienned
Garlic 1 tsp, finely chopped
Curry leaves a few
Green chilly 2 nos, chopped
Cilantro for garnishing
Salt as needed
Oil for shallow frying
Onions 1 big, thinly sliced

Preparation

In a mixing bowl, add red chilly powder, turmeric powder, fennel seed powder, garam masala and salt. Make a paste by adding little water, about a tablespoon or two. Add the cleaned prawns and mix well to coat the masala. Leave aside for 20 minutes.

Now, heat oil for frying in a pan and shallow fry the prawns until reddish brown color. MAKE SURE NOT TO OVERCOOK THEM. Transfer the prawns to a plate.

Now in the same oil, add the onions and sauté till translucent. Next add ginger, garlic, green chilly, curry leaves and salt. Mix well and fry until the onions are golden brown in color. Then add the fried prawns and mix well. Lastly garnish with cilantro and remove from flame.
