To marinate
Boneless chicken 1 kg, cut to small pieces
Potato 2 big, cut to same size pieces as chicken
Red chilly powder 2 tsp
Coriander powder 2 tsp
Turmeric powder 1 tsp
Garam masala 1 tsp
Salt as needed
Coconut oil 2 tsp
In a bowl, add the chicken, potato, red chilly powder, coriander powder, turmeric powder, garam masala, coconut oil and salt. Mix well with your hands and set aside for at least an hour.
For sautéing
Red onion 1 big, chopped
Ginger garlic paste 1 TBSP
Curry leaves as much as you wish
Crushed whole pepper ½ tsp
Crushed cumin seeds ¼ tsp, optional
Grated coconut 1 cup
Mustard seeds 1 tsp
Oil (preferably coconut oil) 3 -4 TBSP
Salt as needed
Preparation
Add the coconut oil in a wide mouth, heavy bottomed pan at medium heat. Once hot, add the marinated chicken and potato and fry till a reddish brown color. Drain the same to a pan.
Into the same oil add the mustard seeds and allow to splutter. Add curry leaves and ginger garlic paste. Sauté well till a nice aroma develops. Now add the onions and grated coconut. Roast well until golden brown in color. Add the crushed pepper and cumin. Mix well. Adjust salt and add the fried chicken and potato. Mix well and switch off flame. Keep covered for a few minutes before serving. Goes very well with rice and rotis specially with pathiris..
