A simple, tangy and flavorful side dish for rice that can be made under 20 minutes. The tanginess from the green tomatoes are the highlight of this aviyal and can be made with everyday ingredients available in your pantry. Here you go…
Green tomato 2 big, cut to thin wedges or rounds
Grated coconut ½ cup
Green chilly 1 no, slit
Red onions 1 small, sliced
Red chilly powder ¼ tsp
Cumin powder ½ tsp
Turmeric powder ¼ tsp
Salt as needed
Coconut oil 1 tsp+ 1 tsp
Curry leaves
Preparation
Heat a non stick pan, and add oil. When hot, sauté the onions along with green chilly and sliced tomato. Sauté this until the tomatoes are cooked but still hold its shape. Add salt, turmeric powder, red chilly powder and cumin powder. Mix well and cook for 3 more minutes. Now add the grated coconut and curry leaves. Mix and adjust salt. Add more curry leaves and sprinkle 1 tsp coconut oil. Switch off flame and close the aviyal for about 10 minutes for the flavors to lock well. Enjoy with rice..
