Vendakka thenga fry/Okra coconut stir fry (Serves 4)

Vendakka thenga fry

Another simple and yummy stir fry with vendakka (okra) and coconut. This is my family’s favorite and am sure it will be loved by kids and adults equally. Hope you all will enjoy it as much as we do, ENJOY!!!

Okra/ Vendakka 2 cups, cut lengthwise
Grated coconut ¼ cup
Red chilly powder 2 tsp
Mustard seeds ½ tsp
Urad dal ½ tsp
Salt as needed
Oil 2 tsp

Preparation

Heat oil in a non stick pan and splutter mustard seeds and urad dal. Add the sliced okra/vendakka and sauté at high heat for 10 minutes. Reduce flame to medium and add salt. Cook for another 10 minutes. Now add red chilly powder and mix well. Sauté for 5 more minutes and add the grated coconut. Fry the mixture until crisp for about 15 more minutes approximately. Enjoy with rice.
