Chemmen thoran/ prawns coconut dry fry- Oil-free (Serves 2)

Prawn dry fry with coocnut/ Chemmen thoran

A true treat to seafood lovers. This oil free thoran/ dry fry with coconut is easy to make and is a perfect side for rice. Thoran is an integral part Kerala's regular lunch and is usually made from a variety of vegetables. Try this one for a change and I am sure it will definitely top your lunch’s menu specials!!!

Prawns/ chemmen 1 cup
Shallots 1 cup, thinly sliced
Green chilly 2 nos, slit
Ginger and garlic ½ TBSP each, chopped
Gamboge/ Kudampuli 1 no
Turmeric powder ½ tsp
Red chilly powder ½ tsp
Grated coconut ¼ cup
Salt as needed
Curry leaves
Water 1 cup

Konchu thoran

Preparation

In a pan, add prawns/ chemmen, salt, turmeric powder, red chilly powder, green chilly and gamboge with 1 cup water cook at medium high heat. When the prawns are half way cooked, add the ginger, garlic, shallots, curry leaves and grated coconut. Mix well to combine and cook this until dry. Enjoy with rice..

Notes: This recipe given here does not use oil, but if you want, add 1-2 tsp coconut oil at the stage when the mixtures becomes dry and sauté for about 5-10 minutes to get a nice flavor.

  23. Do you get Gamboge in the US? Is that what it is called in the Indian grocery store?

    Also, what kind of rice is that in your picture? It reminds me of the boiled rice you get in Goa.

    I think most of the Kerala stores in US have Gamboge/Kudampuli (in malayalam). I am very sure about its availability in the Kerala stores in Houston but don't know about other States. If you couldnt find it in any stores, please check the website below

    The rice in the picture is the Kerala rose matta (Kuthari in malayalam). It is one of the popularly used rice variety in kerala.
