Mushroom ularthu/ Koon ularthyathu (Serves 4)

Mushroom ularthu

This is lent season, a time  when the most ardent of meat eaters would search around for some great veggie alternatives. This recipe, I believe,  would  provide at least a tiny bit of relief even for those inherently carnivorous souls. This is a simple and perfect vegetarian side dish with mushroom with the simplest ingredients available. It goes great with a couple of chapathis or other breads…

Mushroom 16 oz, sliced
Red onions 1 medium, sliced
Coconut slices ¼ cup
Turmeric powder ½ tsp
Red chilly powder 1- 1 ½ tsp
Coriander powder ¼ tsp
Mustard seeds 1 tsp
Salt as needed
Oil 1 TBSP

Preparation

In a mixing bowl, add the sliced mushrooms, red onions, coconut slices, turmeric powder, red chilly powder, coriander powder and salt. Mix well and set aside for 5 minutes. Heat oil in a nonstick pan. When hot, add mustard seeds and wait for it to splutter. Next add the marinated mushroom mixture. Cook this until mushrooms are soft, at medium heat. Make sure you stir the mushroom occasionally. Cook for another 5-10 minutes at high heat to get a crispy texture. Serve with rice or rotis…
