I am back with another simple thoran recipe with cauliflower. This recipe is always a quick fix for me whenever I am out of regular “thoran” vegetables. Thoran is an inevitable part of Kerala's regular meal and this cauliflower thoran fits just like any other thorans, to go with rice and sambar..
Cauliflower 1 medium, cut to thin florets
Onion ½ of one medium, thinly sliced
Green chilly 3 nos, slit
Turmeric powder ½ tsp
Grated coconut 5 TBSP
Mustard seeds ½ tsp
Salt as needed
Oil ½ tsp
Preparation
Wash and pat dry the cauliflower with a paper towel. Cut the flower onto small thin florets as seen in the picture.
Heat oil in a non stick pan, and splutter mustard seeds. Add the cauliflower,thinly sliced onions and split green chillies along with salt. Mix well and cook covered until cauliflower becomes soft. It may take about 10-15 minutes. Open lid in between and mix occasionally. When the cauliflower florets are soft, add turmeric powder and grated coconut. Mix well, adjust salt and take off from stove. Enjoy with rice..
