Carrot halwa is one of the most popular north indian desserts and is specially prepared during festivals. As you all know festival season is fast approaching with Dasara and diwali almost on our doorsteps, we made this delicious, yet simple carrot halwa to celebrate the same. This recipe is the fruitful end result of numerous trials and errors and the consistency for this halwa depends purely on one’s choice. We like it more on its dry form. So why wait friends, put on your aprons to make some delicious, flavorful carrot halwa ….
Carrots 1 lb, grated Sugar ½ lb
Ghee 3 TBSP
Milk ¼ cup
Raisins 2 tsp
Cashew nuts 2 tsp
Preparation
Heat ghee in an open pan at medium heat. Next throw in raisins and cashew nuts. Roast these until golden brown in color. Drain it to a paper towel. Next add in the grated carrot. Stir this continuously at medium heat for about 15 minutes or until the raw smell goes off completely. The carrots should possess a nice dry texture.
In another pan, add sugar along with 2-3 tsp water. Allow the sugar to melt completely, and then add the roasted carrot mixture. Mix well and add milk little by little stirring continuously. Cook this for another 5-10 minutes. Switch off flame when the desired consistency is attained. Garnish with roasted cashew nuts and raisins.
You can refrigerate the carrot halwa once it cools down.
