A great payasam, that you can make for this Onam. A sadhya is not complete without payasam and this year’s onam is almost at our doorsteps, here is a treat from us which you can prepare and enjoy with your family and friends during this onam season…
Whole milk 6 cups + 2 cups
Red rice (Unakalari) 1 ½ cup
Sugar 3 cups
Cardamom 3 pods crushed
Cashewnuts ¼ cup, halved
Golden raisins ¼ cup
Ghee 1 TBSP
Preparation
Wash the rice well in lot of water and drain. Set aside.
Boil 2 cups of milk (medium heat) along with the cleaned rice. Allow the rice to cook 70% with continuous stirring, and then add sugar. Stir continuously until sugar dissolves. Now add 2 more cups of milk from the 6 cups measured. Cook this until the whole volume reduces to half. Make sure you constantly stir the milk or else it gets burned at the bottom of the pan. When it reaches half in volume add the rest 4 cups of milk. Cook this for another 20-30 more minutes or until the rice is completely cooked. Add crushed cardamom and switch off from the stove.
