Originated in France, quiche (pronounced as ‘Keisch’) is a baked snack that has a base of eggs, cream and cheese. We have prepared these mini quiches with spinach and green onions, but any veggie or meat of your choice can also be used. The blend of eggs and cheese along with all the flavors from spinach make these mini forms of deliciousness to just melt in your mouth. Living in Louisiana, the cajun country, we are surrounded by food heavily influenced by French culture and these quiches are examples of one of those foods which we love to have frequently. Olive oil ½ TBSP
Chopped spinach 1 cup, fresh /frozen
Green onions 2 stalks, chopped
Eggs, large 1 nos
Heavy cream ¼ cup
Pepper/hot sauce ¾ tsp
Pepper powder ½ tsp, optional
Salt as needed
Cheddar cheese ¼ cup
Mini puff pastry shells 1 pkt, has 15 shells
Preparation
Preheat oven to 350 F.
Heat oil in a pan at medium heat. Add the spinach and green onions and cook till the spinach starts to wilt. Add pepper powder. Cook for 2-3 more minutes. Meanwhile in a bowl, combine eggs, heavy cream, cheese, pepper/hot sauce and salt until well blended. Add the spinach and green onion mixture to this and mix all to combine.
In an oven proof cookie sheet, lay the mini pastry shells. Fill each shell with the egg mixture and bake for 8-12 minutes or until the quiches are golden and puffed. Enjoy as a snack, starter or even as a brunch.
Tips
For an added crispiness on the shell, bake the shells at 350 F for 5 minutes and allow to completely cool before adding the filling

ReplyDelete@Aps..If you can get the basic puff pastry sheets, just roll them out a little bit thin and cut to rounds, place them onto cupcake moulds, prick with a fork and bake at 350 F for 10-12 mnts..Hope this helps..
