Kappa/Tapioca is one of the best-loved foods in Kerala. Kappa- meen curry is a great combo that has been relished from time immemorial. Today, we would like to present kappa in a different form, similar to cutlets. Kappa rolls are awesome, and see it for yourselves how u r gonna love them!!!
Tapioca/Yuca root/ Kappa 1 lb, peel and cut to small cubes
Green chillies 3 nos, finely chopped
Red onions 1 medium, finely chopped
Turmeric powder 1 tsp
Garam masala ½ tsp
Ginger garlic paste ½ tsp
Bread crumbs 2 cups
Corn flour 3 TBSP
Salt as needed
Oil for deep frying
Preparation
Boil tapioca with turmeric powder and salt until they become tender. Mash them well and set aside.
Heat 1 TBSP oil in a pan and sauté onions till light golden brown color. Add in the green chillies and ginger garlic paste. Saute for a few more minutes. Add garam masala and adjust salt if necessary. Stir well and mix in the mashed tapioca. Cook for one more minute and remove from fire. Allow it to cool.
Meanwhile, mix 4 TBSP water to the corn flour and make a thick batter. Once the mixture is cooled (apply water b/w your palm which helps the mixture from not sticking) roll the mixture into any shape of your choice(round, oval, cylindrical). Dip them in cornflour followed by rolling in bread crumbs to get a nice and even coating. Once all the mixture is rolled, keep them in refrigerator for about 30 minutes. Deep fry them and enjoy as a snack. Serve hot!!

Tips
For non vegetarian version you can add minced chicken or shrimp while sauteing onions
Also instead of corn flour, egg whites can be used as coating agent
