Mango Delight (Serves 4)

This is one of the super easy desserts that would bring a wiff of fruity freshness to your warm summer days. This would be a welcome change from the usual summer treats..Enjoy!!!

Mango ice cream ½ cup
Fresh cream 1 cup
Milk ¼ cup
Sugar ¾ cup
Unflavored gelatin ¾ - 1 TBSP (dissolved in ½ cup ice cold water)


Preparation

In a bowl (preferably glass), mix together fresh cream, milk and sugar. Double boil (Place this bowl on top of another bowl with water boiling) this mixture until it thickens. When it starts to thicken, add the gelatin and stir well to dissolve. Now add the ice cream and mix well, switch off the flame (this will have lighter shade of yellow as we are using mango ice cream instead of mango puree or fresh mango) and pour into serving bowl/ bowls. Refrigerate for at least 4-5 hours. Mango delight has a custard like consistency. Serve with whip topping and a dash of strawberry syrup..Try it and we are sure you will love it..
