No Bake Mango Pie (Serves 8)



Mangoes are always Malayali’s favorite fruit. The first thing that comes to any malayali with the thought of mangoes will be their childhood. Our first recipe is an easy dessert with mangoes.. NO BAKE MANGO PIE. Thanks to Bhuvana chehci for this wonderful dessert recipe. Here is what you will need,

For the Pie shell

Store bought graham cracker pie shell 1 no

For the pudding

Mango pulp ½ of a 30oz can
Philadelphia cream cheese 2 eight oz sticks
Jello (Strawberry/peach) - one 3oz pack
Marshmellows 1 cup
Whipping cream to decorate

Preparation

Heat a saucepan and cook the entire contents of the jello packet  in 1 cup boiling water.Once the jello is dissolved reduce the flame to a simmer and add the marshmellows. Keep stirring for a couple of minutes until all the marshmellows melt. Add the mango pulp, cream cheese and the slightly-cooled jello-marshmellow syrup to a blender and blend them well. Pour this mixture into the pie shell. Refrigerate for a minimum of 5 hours before serving. Top with whip cream and enjoy a yummy dessert with your loved ones..




Tips


You can make the pie crust yourself. The recipe follows:


Melt 6 TBSP of butter in a saucepan.
Crush about 25-30 graham crackers and measure 1.5 cups of the crushed crackers into a bowl.
Add 1/2 cup of sugar and melted butter.
Mix all these well with your hands.
Press this mixture onto the pie pan and pre bake the crust at 350 F for 10-12 minutes.
